A lunch celebrating Spain’s national dish (and it's not paella)

From medieval Castile to family kitchens across Spain, cocido is one of the country’s great comfort foods. On Saturday 12 September, we’re bringing it to MoVida AQUI for Eat Spain Drink Spain month in Australia, served the traditional Madrid way.

Cocido comes in countless forms across Spain, but Cocido Madrileño belongs to Madrid, where a humble working-class meal became a fixture of the city’s restaurants. Institutions like La Bola and Malacatín have been serving their own versions for generations.

Beef shin, chicken, pork ribs, jamón, chorizo and morcilla all go into one pot, simmered slowly with chickpeas and vegetables until the broth is rich and deeply flavoured.

For Frank, cocido is part of family life. His mum made it regularly when he was growing up, and today he makes it when the family comes together.

On the day, we’ll serve it in three chapters: a steaming broth with fideos, tender chickpeas and vegetables, then a generous platter of meats and sacramentos, with something sweet to finish, of course.
