Alvar de Dios Tio Uco Tempranillo

Named in honor of a local folklore hero who brought two warring towns together in a time of famine - Tio Uco is from a mixture of rented vineyards that Alvar farms in the upper sandy areas as well as the lower lying vineyards he inherited. It's mostly Tinto de Toro, the local, thick skinned Tempranillo clone but there's about 10% of old vine Garnacha that finds its way into the blend, helping to add floral aromatics and an extra lick of natural acidity. Fermented with natural yeasts in a combination of whole bunches and whole berries in a single 3,500L vat and a couple of 500l barriques.

Tio Uco is Alvar's everyday, corner-Tapas bar Toro, full of fresh berries, crunchy fruit and singing acid. It's a remarkably un-Toro-esq Toro, still 14% abv and there's nothing sappy or green here but it's the first Toro we've seen that could be downed in the park on a sunny summer's day.
