Muchada‑Léclapart is an innovative, small‑production winery in the historic Marco de Jerez of Sanlúcar de Barrameda, Andalusia, born from the collaboration between Cádiz winegrower Alejandro Muchada and French biodynamic specialist David Léclapart. Their project focuses on crafting dry, unfortified white wines from the indigenous Palomino grape — traditionally associated with Sherry — using biodynamic viticulture, minimal intervention in the cellar, and a deep respect for the region’s limestone “albariza” soils and Atlantic influence. By embracing spontaneous fermentations, low sulphur usage, lees ageing and bottling without filtration, Muchada‑Léclapart produces saline, mineral‑driven wines with purity, texture and gastronomic depth that have quickly gained attention from critics and adventurous wine lovers alike. 

Univers is from Miraflores baja, a tiny parcel that is focused toward the ocean and recieves lovely cooling breezes. Fermented and aged on its lees for around 9–10 months in steel tanks. It's incredibly fresh with notable salinity, minerality and citrus‑tinged fruit that reflect the albariza soils and cool Atlantic influence.
