Fresh Seafood with Romesco Romesco con Marisco

A simple seafood dish that’s all about good produce and a great sauce. Use whatever’s fresh—this version has prawns, mussels, clams and octopus. Finished with a jar of our Romesco

Method

  1. Toss the prawns and octopus in olive oil and sea salt. Grill on a hot plate or barbecue until lightly charred and just cooked. Set aside.
  2. In a wide pan, add a splash of oil, then the mussels, clams and wine. Cover and steam for 3–4 minutes, until the shells open. Discard any that don’t.
  3. Turn off the heat. Add the grilled seafood to the pan and fold through the romesco. Warm through gently.
  4. Serve with lemon, parsley and crusty bread. Cold beer or white wine optional—but recommended.
