
Fresh Seafood with Romesco Romesco con Marisco
A simple seafood dish that’s all about good produce and a great sauce. Use whatever’s fresh—this version has prawns, mussels, clams and octopus. Finished with a jar of our Romesco
Method
- Toss the prawns and octopus in olive oil and sea salt. Grill on a hot plate or barbecue until lightly charred and just cooked. Set aside.
- In a wide pan, add a splash of oil, then the mussels, clams and wine. Cover and steam for 3–4 minutes, until the shells open. Discard any that don’t.
- Turn off the heat. Add the grilled seafood to the pan and fold through the romesco. Warm through gently.
- Serve with lemon, parsley and crusty bread. Cold beer or white wine optional—but recommended.
